The “Santo estate” has been directed since 1998 by Calcagni family. Since the beginning, it has been managed in the respect of environment, so what was once an uncultivated land where only brush grew has become an arable land, where livestock live, with a natural habitat full of different vegetables and animals, and where biological good practices have been applied. Here you can come across wild animals: wild oar, deers, roe-buck, porcupines, hares and foxes , as well as noble birds of pray, such as eagles, hawls, buzzards.
Breeding is one of the main businesses of the farm: maremma cows, goats and American mounted horses are fed with our own forage. From the start, rustic breeds have been selected as a guarantee for strength and meat quality. We feed live stock with hay and grass only, with sometimes a small addition of bran and barley, animals graze in our extended lawns. The new born are fed with mother’s milk, fecundation is natural, and cattleshed is free.
We produce olive oil (from over 1500 olive trees), maremma meat, honey from different flowers, and we will soon offer to our guest fresh season vegetables and rare and precious fruits from our garden, and seasoning herbs.
Our guest can enjoy dinner, and also tasting menu are arranged, with our own products or products from other farmers of the territory.
Tasting menus are arranged on reservation or on special occasions when promoting orgnic local products. Our bistrot will offer to our guests traditional dishes, from our own biological production and typical Tuscany product, always according to the season.
Our guests will so experience feelings and emotions of ancient time, and will feel like being at home.
